- 1 sea bream, 600 g
- 3 potatoes
- 4 tomatoes
- 1 onion
- 1 garlic bulb
- White wine
- Fish stock
- Parsley
- Olive oil
A delicious fish option, simple to prepare and with a very attractive presentation.
Preparation:
Wash all the vegetables, then cook them very slowly in olive oil to prepare a confit. When they are done, leave them to drain on absorbent paper. Wash the sea bream, fillet it and make a stock with the bones.
Once the stock is ready, put the onion and potatoes in a small saucepan and let them cook for 5 minutes with a spoonful of this stock. Then add the sea bream fillet with salt and pepper, and add a little more stock. Put the lid on and let it cook until the fish is ready.
Then add the tomato and chopped parsley and let it stand for 5 minutes before serving.
