Step-by-step method:
One day before, cut the meat into large cubes and marinate in a deep earthenware dish with the wine, lemon juice and cinnamon.
Put the meat in a dish with lard and salt, and cover with brown paper.
Cook for one hour in a hot oven.
The meat should be golden on the outside and slightly rare on the inside.
Serve with boiled peas and the gravy from the meat.
