Sustainable recipe

Ingredients 

  • 2 oranges
  • 3 eggs
  • 20 g white chocolate
  • 2 spoons of orange honey
  • 20 g flour
  • 20 g icing sugar

Preparation

Cut off the top and bottom (very little) of the two oranges and take out the flesh (without tearing the skin). Blend the inner part and strain to obtain the juice of the oranges.

Separate the eggs whites and yolks into two bowls. Mix the egg whites into stiff peaks.

Mix the yolks with the orange honey, flour and orange juice, place on a bain-marie and whisk until the yolk is cooked through. Once cooked, remove it, add the hot chocolate and mix with a spatula.

Carefully mix the remaining egg white and mixture in the same bowl with a spatula.

Fill the oranges to ¾ full and bake for 8 minutes at 180-190 ºC (with the oven preheated to 250 ºC).

Remove and sprinkle with icing sugar.
