Goat’s cheese coca with pear chutney
Ingredients
- 1 small onion
- 1 apple, peeled and cored
- 1 pear, peeled and cored
- Raisins and /or dried cranberries
- Grated orange peel
- Apple vinegar
- 4 spoons brown sugar
- Ginger, cinnamon and other spices to suit your taste
- Creamy goat’s cheese with fluffy rind
- Coca flat bread
- Aromatic sprigs of herbs
If you like sweet and savoury combinations, why not try this dish? We recommend you serve it with sprigs of refreshing aromatic herbs and a dash of oil.
Preparation:
Dice the onion, apple and pear into little cubes.
Put them all to cook on a low heat with the raisins and cranberries, plus the cinnamon, ginger, sugar, vinegar and a pinch of salt. Wait until all the liquid has evaporated and it has the consistency of jam.
Slice the coca bread in half and toast it.
Put a spoonful of chutney on each piece of toast and a slice of cheese on top.
Then pop them in the oven briefly and finish them off with a touch of pepper. Serve with a small sprig of aromatic herbs to liven them up a bit and a dash of oil.
