Crispy fried rockfish with Catalan tomato bread

Ingredients
- 600g rockfish
- 100g gram flour
- 600ml high oleic oil for frying
- 400g rustic style white bread
- 4 red hanging tomatoes
- 1 clove of garlic
- 4cl virgin olive oil
Preparation
- Clean the fish and drain well, sprinkle with a little salt and coat with gram flour.
- Heat some oil in a pan, and when it reaches 180º C add the fish and fry until golden. Remove from the heat, and drain on kitchen paper.
- Slice the bread, toast, and rub with garlic. Rub the tomato all over the surface of the bread (use the hanging tomatoes), and drizzle over some virgin olive oil (arbequina if possible).
