Crema catalana mousse with pineapple

A simple and original dessert that is very easy to make and which always delights.
Step-by-step method:
Cut the pineapple into four slices, removing the rind and core.
Dust these with sugar and burn the sugar using a kitchen blowtorch or a crema catalana burner.
Prepare the crema catalana mousse separately, mixing one part crema catalana, one part milk and one part cream. Whip until you have the right consistency and fill a piping bag with it.
Using the piping bag, decorate the pineapple slices with the crema catalana.
