Catalan-style chicken

A traditional Catalan dish that brings your table the aromas of your grandmother's cooking.
Step-by-step method:
Wash the chicken, which you will have had cut up into quarters at the market stall. Season it with salt and pepper and fry it until golden brown in a pan with oil. Once it is golden brown, remove it and place it in a casserole.
Using the same pan and oil, fry the prunes and dried apricots, remove them and pour them over the chicken. Fry the chopped onion in the same pan and, once it has gone golden brown, add it to the casserole with the chicken and dried fruit and nuts.
Then add the aged wine and two bay leaves, leaving this on the hob over a slow flame until the chicken becomes tender.
Note: Larger chickens will take longer to cook, so you should add a bit of chicken broth or water to it while it cooks.
