Pineapple treat
Ingredients
- 2 large pineapples
- 1 kg cooked Dublin Bay prawns
- 1 iceberg lettuce
- 3 hard-boiled eggs
- 2 turns of pimientos morrones (spicy peppers)
- 1 large jar of prawn cocktail sauce
Pineapple is a very aromatic tropical fruit with an intensive flavour and very interesting nutritional qualities.
Step-by-step method:
Peel the prawns, cutting any large ones in smaller pieces.
Reserve some whole prawns for decoration.
Wash and shred the lettuce.
Chop the eggs finely and cube the peppers.
Remove the tops from the pineapples (keep for decoration) and scoop out the flesh and cut in small pieces.
Mix all the ingredients with the cocktail sauce and return to the pineapple shell. Decorate with whole prawns and top with the pineapple crowns.
