Oven-baked sea bass
Ingredients
- 1 sea bass
- 1 or 2 onions, finely sliced
- 2 or 3 ripe tomatoes
- 3 cloves of garlic
- olive oil
- salt and parsley
A festival dish. Sea bass is a very fine and tasty fish. It has very little fat and lots of proteins.
Step-by-step method:
Cover the bass of an oven dish with olive oil, and line first with the finely sliced onion and then tomato.
Season and cover with a little olive oil.
Make two knife cuts in the fish (so that it cooks better) and season.
Crush the garlic and parsley with a little oil in a pestle and mortar and pour over the fish.
Cook the fish in the oven (170ºC) with a little oil, for around twenty minutes, depending on the size of the fish.
Remove carefully so that the fish remains whole, and serve in its own sauce.
