Prawns with mango sauce
Ingredients
- 1/2 cup of olive oil
- 1 chopped onion
- 1/4 cup of parsley
- 1/4 cup of chopped basil
- 1/2 lemon (juice)
- 2 chopped garlic cloves
- 1 spoonful of pepper
- 1 spoonful of mustard
- 3/4 kg prawns
Sauce:
- 1 spoonful of olive oil
- 1 chopped onion
- 1 spoonful of ground ginger
- 1/2 chopped fresh, seedless chili pepper
- 1 chopped garlic clove
- 1 mango
- 1/2 orange (juice)
- 1 spoonful of sugar
- 1/2 spoonful of chopped coriander
- Salt
- Pepper
A simple, speedy recipe that marinates prawns to perfection with a spicy mango sauce.
Step-by-step method:
Shell the prawns, leaving only their tail and put them in a container. Mix the olive oil in a bowl with the chopped onion and garlic and the parsley, basil, lemon juice, mustard and pepper. Pour the mixture over the prawns and cover them with cling film. Leave them in the fridge to marinate for an hour.
To prepare the sauce, mix the oil in a container with the chopped onion and garlic, the ginger, the chili pepper (to taste), the mango (diced), the orange juice and the sugar. Cover this cling film too and leave it to set at room temperature for 30 minutes or so. Add salt and pepper when serving.
Pre-heat the oven and place the prawns on an oven rack. Cook them for two to three minutes, turning them when they need it.
Serve on a plate with a bowl of spicy mango sauce in the centre.
